Julius Persoone is the second generation running The Chocolate Line, a family business, voted 2023 Gault & Millau Chocolatier of the Year. It develops its own bean-to-bar chocolate products and designs pralines for numerous starred restaurants. They have collaborated with a range of fashion houses, including Louis Vuitton, Philipp Plein, Fendi and Stephen.

Persoone’s up-to-date vision of chocolate makes him passionate about colours and developing new flavours. He moreover focuses on achieving sustainability in all facets of his work.

Julius Persoone “In our work, we try to convey emotion and offer gastronomy in a praline. The idea is to cut through, analyse and consciously experience the taste. It has been fantastic to be able to be creative with all the different techniques in order to arrive at this box of chocolates. It takes a lot of work, but it is also a unique opportunity to design something for such leading fashion designers. I have truly considered it a huge honour. I hope the designers are also surprised by the result.”
