Ganache of saffron, beurre noisette and lime
The filling builds on the intercultural vibe of Van Essche’s designs. Different flavours come together, contrasting the dark of the outside with the almost fluorescent orange of the saffron and lime filling.
Jan-Jan Van Essche is inspired by cultures from all over the world, with a special focus on sustainable and local production. It is not the differences, but the similarities that fascinate hhim. He does not incorporate these ideas into pamphlets, but into a sleeve or a pair of trousers. He prefers methods that use natural colours. The jeans silhouette was dyed in Japan, using an original technique with sumi ink, also used in Japanese calligraphy.
